Instructions

Step 1

Dice the potatoes into medium-sized cubes. You can keep the skin on if you fancy!

Bring water to a boil and cook the potatoes for 3 minutes. This brief step will help the potatoes stay fluffy inside and crispy outside.

Now drain them and let them cool a moment.

Step 2

Bring frying oil to 270°F (130°C).

Now fry the potatoes for 5 minutes and remove. Do not let them brown yet.

Step 3

Once you have fried all the potatoes, let them rest a moment and proceed with the following:

In a skillet, add the extra virgin olive oil, chilies, chopped coriander (keep a few leaves for topping before serving), and finely crushed garlic.

Cook on medium heat until the garlic starts to sizzle. Cook the ingredients long enough for them to release their flavour into the oil, but do not burn the garlic.
