Instructions
Step 1
Let's start by preparing all the vegetables.
Finely chop the onion, trim and cut the green beans, peel and slice the carrots, mince the garlic, and finely chop the bird's eye chilli.

In a large pot, heat the extra virgin olive oil over medium heat.
First, add the chopped onion and sauté until it becomes translucent, about 5-7 minutes.
Then, add the minced garlic, 7-Spice mix, and bird's eye chilli to the pot, and sauté for another 1-2 minutes until fragrant.
Step 3
Now, add the sliced carrots and the lentils (optional) to the pot and cook for about 3-4 minutes, stirring occasionally.
Then, add the green beans and continue to sauté for another 5 minutes, allowing them to soften slightly.
Finally, stir in the tomato concentrate and let everything sizzle for a minute.

Pour in one cup of pre-boiled water and add the salt. Stir well to combine all the ingredients.
Bring the mixture to a boil, if needed, then reduce the heat to low and cover the pot.
Let the stew simmer for 25-30 minutes, or until the vegetables are tender and the flavors have melded together.
