Instructions

Step 1

Rinse 1 cup of freekeh under cold water until the water runs clear.

Soak the freekeh in warm water for about 30 minutes, then drain.

Step 2

In a medium pot, heat 1 tablespoon of extra virgin olive oil over medium heat.

Add 1 small chopped onion and sauté until translucent, about 5 minutes.

Add the drained freekeh to the pot and toast it for 2-3 minutes, stirring frequently.

Pour in 2 cups of chicken stock, 1/2 teaspoon of salt, and 1 teaspoon of 7-spice.

Bring to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the freekeh is tender and the liquid is absorbed.
